Mustard seeds are the most used spice in India. These are round and aromatic seeds. They are 1-2 mm in diameter and black, brown and yellow. From ancient times this spice has been ruling the kitchen floor. There are being fried until they make a pop sound. Wet mustard is made up of the blending process of yellow and black or brown seeds. While making the seeds wet, the dry mustard seeds are mixed up with water. Then an enzyme response is initiated making the seed hot. In this process, the mustard seeds are hot until they are preserved. The warmth lasts for only 24 hrs. But in the case of black or brown mustard seeds, the heat is usually kept up for a long time.
We all have heard about rice flour and wheat flour but there is also mustard flour in which the bran is removed from the seed. It is almost similar to other flours with 70% of brassica in it. Mustard flour is mainly used in making mayonnaise. The mustard seeds are no of use when the seeds are broken and liquid is added. Therefore the mustard seeds oil can produce heat.
